Tuna & Kumara Patties

A yummy and versatile fish recipe both toddlers and older kids will enjoy!

These scrummy Tuna & Kumara Patties are perfect in the lunchbox, as a snack or served as part of a more substantial meal.

They are easy to make and versatile. I often substitute the capsicum for other vegies, like courgette, peas or spinach, to name but a few. As for the kumara, you could use a combination of root vegetables, which is just ideal for when you have a handful of leftover roasted vegie from dinner, making this a great zero-waste recipe too.

 
 
 
 

These little patties are also lovely served as finger food for birthdays and other special celebrations. They taste divine and look absolutely adorable when served with a little Guacamole pipped on top. Not only they’ll appeal to all-ages, these Tuna & Kumara Patties are a much healthier and tastier alternative to shop-bought party food.

 
 
 
 

Tuna & Kumara Patties

Makes 24 mini-patties

 
 

Ingredients:

650 g red kumara, peeled and cut into chunks boiled, steamed or baked

1 small red onion, finely chopped

½ red capsicum, finely diced

2 garlic cloves, finely crushed

2 Tbsp parsley, finely chopped

1 Tbsp chives, finely snipped

1 can tuna in olive oil, drained and flaked

1 egg, lightly beaten

Salt and pepper, to season

Cooking spray or alternative, to fry

Method:

 
 
 
 

1. Boil, steam or bake the kumara until soft. Mash.

2. Meanwhile, cook the red onion, capsicum, garlic in a little oil until soft. Allow to cool slightly.

 
 
 
 

3. In a bowl, add the cooled onion and capsicum mix, chopped herbs and flaked tuna. Season to taste and mix well to combine.

4. Add the onion and tuna mix and lightly beaten egg to the mashed kumara. Mix until well incorporated. Check seasoning.

 
 
 
 

5. Using a teaspoon as measure, shape the mixture into mini patties (first shape into a ball, then press slightly to flatten the middle).

 
 
 
 

6. Heat a non-stick frying pan or oven tray. Spray or lightly coat with oil.

7. Fry the Tuna & Kumara Patties for a few minutes, turn over and continue cooking until cakes are nicely golden.

*If baking Tuna & Kumara Patties instead of frying, preheat oven to 200°C, place patties on tray and bake for about 8 minutes.  Carefully turn patties over with a spatula and return tray to the oven for another 6-8 minutes, or until nicely golden and heated through.
